A magical unicorn cake with rainbow layers and pastel buttercream, perfect for birthday celebrations!
Ingredients
2 ¾ cups all-purpose flour
2 ½ tsp baking powder
½ tsp salt
2 sticks unsalted butter, room temp
1 ½ cups sugar
3 eggs
2 ½ tsp vanilla extract
1 cup buttermilk
½ cup pastel sprinkles
Instructions
Step 1: Preheat oven to 350°F. Grease and line three 8-inch round pans.
Step 2: Beat butter and sugar until fluffy. Add eggs, then vanilla.
Step 3: In another bowl, mix flour, baking powder, and salt.
Step 4: Add dry mixture alternately with buttermilk, stirring gently. Fold in sprinkles.
Step 5: Divide batter. Bake 25-30 min. Cool completely.
Step 6: Stack and frost with pastel buttercream. Decorate with horn, ears, and mane.
Notes
Freeze layers for easier frosting.
Use a sugar cone or fondant for the horn.
Buttercream can be colored in any shades you like.
