Ingredients

▢1 cup warm water.

▢1 tablespoon inulin or sub sugar or honey.

▢2 teaspoons instant dried yeast (7g).

▢2 eggs room temperature large eggs. 

▢ Pinch salt flakes.

▢2/3 cup golden flax meal (80g) or almond meal.

▢1/2 cup oat fiber (50g). 

▢1 1/4 cup gluten flour (180g).

▢70 g (2.5 oz) salted butter cubed.

▢1/2 tsp xanthan gum optional.


Instructions

Conventional Method

  1. Activate the Yeast:
    In a bowl, combine inulin and yeast with water. Cover with cling film and a silicone mat, then let it sit in a warm place until the yeast becomes foamy and nearly doubles in size (about 20–40 minutes).

  2. Prepare the Dough:
    Add all ingredients, including the activated yeast, to a mixer. Using the dough hook attachment, knead for at least 5 minutes until the dough is smooth, soft, and supple (it should not be wet).

  3. Shape the Dough:
    Stretch the dough into a large rectangle, about as wide as your loaf tin. Roll the dough lengthwise into a log and place it seam-side down in the loaf tin.

  4. Proof the Dough:
    Cover the loaf with a clean towel or silicone mat and let it rise in a warm place for about 1 hour, or until it has risen.

  5. Bake:
    Preheat your oven to 170°C (fan) / 190°C (static) / 375°F. Line a 25.5 x 13 cm (10 x 5 inch) loaf pan. Bake for 40–45 minutes. Cool the loaf on a wire rack before slicing.


Thermomix Low Carb Bread Method

  1. Activate the Yeast:
    Add inulin, yeast, and warm water to the Thermomix bowl. Heat for 2 minutes at 37°C on speed 1. Leave the lid on and let it sit for 10–15 minutes, or until thick and foamy.

  2. Prepare the Dough:
    Add all remaining ingredients to the bowl. Knead for 5 minutes using the dough setting.

  3. Shape, Proof, and Bake:
    Continue from Step 3 of the conventional method above.
