Get perfectly juicy chicken breasts in just 12–15 minutes with these quick boiling tips and flavor-boosting tricks!
Ingredients
- 1 to 4 boneless, skinless chicken breasts (roughly 12 ounces each)
- 1 teaspoon salt
- Optional seasonings: smashed garlic, bay leaf, peppercorns, sliced ginger, sliced lemons or oranges, sliced onions or celery, fresh rosemary, fresh thyme
Instructions
Arrange the chicken in a single layer at the bottom of a pan.
It’s fine if the pieces overlap slightly.
Pour in enough water to cover the chicken by about an inch.
Add salt and any other seasonings you prefer.
Set the pan over medium-high heat and bring the water to a boil.
As it heats, you may notice foam forming on the surface. If you plan to use the cooking liquid for another recipe, skim off the foam; otherwise, you can leave it.
Once the water boils, reduce the heat to low and cover the pan.
Let the chicken simmer for 8 to 15 minutes. Start checking at 8 minutes—thin pieces will cook quickly, while larger breasts may take up to 15 minutes.
The chicken is done when an instant-read thermometer inserted into the thickest part reads 165°F, or when the meat is no longer pink inside. Continue to check every minute or so until fully cooked.
Transfer the chicken to a plate or cutting board and let it cool briefly.
Once it’s cool enough to handle, shred or slice as needed. Use right away, or let it cool completely and store in the refrigerator for up to 5 days. Shredded or sliced chicken can also be frozen for up to 3 months.
