Description

A grinder sandwich is the ultimate deli classic—piled high with savory meats, creamy cheese, crisp veggies, and a tangy salad on hearty bread. It’s easy, customizable, and perfect for sharing at any gathering.


Ingredients

SALAD:

▢1/4 thinly sliced red onion

▢1/2 cup mayonnaise

▢2 tablespoons red wine vinegar

▢1 teaspoon ground oregano

▢1/4 teaspoon crushed red pepper

▢3 minced garlic cloves

▢1/2 head of iceberg lettuce

▢3 pepperoncinis, sliced

▢Kosher salt and pepper, to taste

SANDWICH:

▢Italian loaves, (or you could use hoagie loaves)

▢Calabrian paste

▢2 slices Havarti cheese

▢2 slices Colby jack

▢3 slices salami

▢3 slices prosciutto

▢3 slices spicy pepperoni

▢Fresh parmesan

▢1 tomato

▢1 white onion

▢Kosher salt and black pepper

▢Freshly grated parmesan, to taste


Instructions

Preheat your oven to 350°F (175°C). Place the sliced red onion in a bowl, cover it with cold water, and let it soak—this helps mellow out its sharpness. In a separate bowl, whisk together the mayonnaise, red wine vinegar, oregano, red pepper flakes, and minced garlic. Add the lettuce, drained onion, and pepperoncini to the dressing, then toss and taste. Adjust with salt and pepper as needed.

 

Next, slice the bread in half lengthwise. Spread Calabrian chili paste on both cut sides. Layer cheese on one half and arrange the deli meats on the other. Place both halves in the oven for about 5 minutes, just until the cheese is melted and the meats are warmed through.

 

Remove from the oven and pile the salad mixture over the meat. Top with tomato slices, a few rings of fresh onion, and a sprinkle of parmesan cheese. Close the sandwich, slice it in half, and enjoy!
