Cheerful funfetti bluey birthday cake with buttercream, perfect for parties
Ingredients
3 cups all-purpose flour
3 cups sugar
2 1/2 tsp baking powder
1 tsp salt
1 cup unsalted butter (room temp)
1 cup egg whites (about 7 large)
1 1/2 cups buttermilk
2 tbsp oil
2 tsp vanilla extract
1/2 cup rainbow sprinkles
For Buttercream:
3 cups unsalted butter
10 cups powdered sugar
1 tbsp vanilla
1/2 cup heavy cream
Instructions
Étape 1: Preheat oven to 350°F. Grease 3 round cake pans.
Étape 2: Whisk flour, baking powder, and salt in a bowl.
Étape 3: Beat butter and sugar until creamy. Gradually add egg whites until incorporated.
Étape 4: Add oil, vanilla, then alternate in flour mix and buttermilk. Stir in sprinkles.
Étape 5: Divide into pans. Bake 30–35 min, cool on racks.
Étape 6: Make buttercream: Beat butter, sugar, vanilla, and cream until fluffy. Divide and tint colors.
Étape 7: Assemble cooled cakes. Crumb coat with blue. Chill.
Étape 8: Pipe dark & light blues for face, yellow/tan for muzzle, black for features. Add eyes and ears.
Étape 9: Chill to set. Serve slices with joy!
Notes
Use cake dowels for tall cakes.
Swap sprinkles for cocoa in batter for a chocolate option.
Store covered in fridge up to 3 days.
